Orange Quick Bread

Inspired by Walter Mitty's mom's Celementine Cake, I had oranges on my mind.  Especially since our neighbor will often leave us bags of fruit from his backyard trees that he does not use.


Also because my sister gave me this rad cast iron bread pan for Christmas, I have been waiting for the perfect opportunity to christen it.

I have also been waiting for the opportunity to use the flour my husband gave me for Christmas, which was locally grown and processed right here in Phoenix from Hayden Flour Mills.  Check out this beautiful label!


I ended up with this Cranberry Orange Bread recipe, in which I altered it a bit to use my Red Fife Flour (also from Hayden Flour Mills), and left out the brown sugar altogether.  I also halved the amount of cranberries, and covered the difference with pecans.



It was a wonderful and inspiring way to spend my Sunday morning.  Now we can feast all week for breakfast!
